The Angelique Cookbook


CONGO BARS

2/3 cup butter or margarine
3 eggs (a few at a time)
2 1/2 cups flour
6 ounces chocolate chips
1 cup chopped nuts (optional)
1 lb. brown sugar
1 teaspoon vanilla
2 1/2 teaspoons baking powder
6 ounces butterscotch chips

Mix brown sugar and butter until smooth. Then beat in eggs a few at a time. Add vanilla and blend in. Add flour and baking powder and mix well. Add chocolate chips, butterscotch chips and chopped nuts (optional). Pour into a greased 9" x 13" baking pan. Bake in a medium oven (350 deg) 30-40 minutes until golden brown. Cool the pan on a rack. Cut into squares. Serves 15 people.

CARROT SALAD (Copper Pennies)

2 lbs. carrots (sliced in wheels)
1/2 cup salad oil
2 green peppers (sliced thin)
1/2 cup sugar
1 medium onion (sliced thin)
3/4 cup vinegar
1 small can tomato sauce
1 teaspoon (to taste) mustard

Cook carrots until tender and drain. Add other ingredients and marinate for several hours. Serves 20 people.
