  The Angelique Galley

The Angelique Galley

Angelique has sailed from Camden Harbor, offering wonderful cruise vacations since 1980. Our cook uses a Beaufort model Dikinson stove that takes up most of the galley's 5 x 17-foot area, turning out home-cooked meals that more than satisfy a whole boat load of guests and crew, about 40 people in all. Guests come on board saying they have heard about Angelique’s meals, and when they leave the vessel they have often begged for a recipe or two.

BROWNIES

3/4 cup butter, melted
1 1/2 cups white sugar
1 1/2 teaspoon vanilla extract
2 eggs
3/4 cup all purpose flour
1/2 cup plus 3 tablespoons unsweetened cocoa powder
1/2 tsp salt
1/2- 3/4 cup semi sweet chocolate chips
1/2 cup chopped walnuts (optional)

1. Preheat oven to 350 degrees. Grease a 8 inch pan.

2. In large bowl, mix together melted butter, sugar and vanilla. Add eggs, one at a time, mixing well after each one. Combine dry ingredients in seperate bowl, gradually mix into egg mixture. Stir in chocolate chips and walnuts. Place mixture into prepared pan and spread with spoon.

3. Bake in pre heated oven for 40 minutes. Brownies will start to pull away from sides of pan when done.
Let brownies cool before cutting into squares. YUM!

This recipe doubles easily for 9x13 inch pan baking time increase 45-50 min.

Food on board the Angelique captures the flavor of the coast of Maine.
This is home-cooking, based on the Maine philosophy of having "Good food, plenty of it."
